Tres Leches Recipe by Doña Bárbara

Now that we are fully immersed in the holiday season, we didn’t want to miss the opportunity to recommend a dessert for you to enjoy with your loved ones during holiday dinners or meals.

This time, we had the great help of Andrés and Yeli from Doña Bárbara, a specialty coffee shop in A Coruña that combines quality coffee with a variety of homemade sweets. It’s undoubtedly our favorite in the city!

They suggested creating a version of the famous “Tres Leches” dessert, popular in Venezuela, where Andrés and Yeli are originally from.

In homage to our AW23 campaign titled “Los Amigos” (The Friends), we wanted to represent different Christmas-themed friends in the dessert itself. Stay tuned for the results!

Sponge Cake

· 4 eggs

· 150 g sugar

· 1 small tablespoon vanilla essence

· 95 g all-purpose flour (sifted)

First of all, preheat the oven to 180ºC. Then, beat the eggs until they acquire a foamy texture and gradually add the sugar while continuing to beat.

Add the sifted flour and vanilla essence. Mix everything and pour the resulting batter into a mold.

Additional tip: You can add the zest of a lemon or orange to give the sponge cake a slight citrusy touch.

Bake for 25-30 minutes, and the sponge cake is ready!

Cream

· 410 g evaporated milk

· 370 g condensed milk

· 370 g heavy cream

Beat the egg whites until stiff peaks form, gradually add the sugar and salt until you get a consistent meringue.

Finally, cover the soaked sponge cake with the meringue and decorate it as you like. We created these Christmas-themed friends to showcase in the center of the table, but let your imagination soar!

Meringue

· 125 g egg whites (approximately 4 or 5 egg whites)

· 250 g sugar

· 1/2 small tablespoon salt

Beat the egg whites until stiff peaks form, gradually add the sugar and salt until you get a consistent meringue.

Finally, cover the soaked sponge cake with the meringue and decorate it as you like. We created these Christmas-themed friends to showcase in the center of the table, but let your imagination soar!
